I don't want Apple Music. How do I avoid this useless app and what are my options?

What assumptions is Apple making about me and my preferences? Too many and the wrong ones. I want a user-friendly alternative (such as ITunes the way it worked before) with my purchased/downloaded library and an easy way to purchase/download the music I want (new or god forbid older). I do not want entire albums, I don't follow anyone, and I'm not going to spend time sharing my music preferences with others. The new interface assumes I want AM, and that I spend a crazy amount of time thinking about what's/who's new. I'm shut out of what I want from Apple's service, which means I'm open to other services that are not Apple. I'm not an audiophile, I like music but I use my time better than obsessing over the latest "must have" music out there. I want to listen to what I want when I want. What are my options?

Thanks both of you. I do actually know how to use ITunes (songs view, etc.)or at least I never had problems with it before the Big Push to get everyone on AM.

Here's what I'm seeing when I open ITunes on my laptop (I also do so on my phone, but my laptop is where I see a real shift). I either get an ad for Apple Music that has to be closed (and occasionally can't be), or whatever I navigate to is now couched in terms of subscribing. Here's what I'm experiencing today: say I get into ITunes and I want to pull up a favorite artist and maybe purchase/download a song file. There is no longer a query window where I can search the name of the artist. If I go to "Artists" in the left menu column obviously I'm leaving ITunes Store, so that doesn't work. The top menu bar offers no options, nor does the dropdown menu in the upper right corner. I have moved the window all around looking for a place to query, it's not there. My assumption is that they really, really want me to move to Apple Music.
