How can I make voice isolation the default setting?

Your selection affects only the app you're using to make the call. Voice Isolation or Wide Spectrum persists for that app until you choose a different Mic Mode.

In other words, if you have chosen “Voice Isolation” during a phone call then it will remain as chosen for all your phone calls. All apps that you use the microphone for, will remember the setting.
