When I connect my Dell monitor to my macbook (M1 Pro), the volume control is disabled. The sound plays, but I cannot control the volume from the keyboard.
I tried to install the app 'monitorcontrol', but I still cannot adjust the volume on my monitor from the keyboard.
This works on my Windows PC connected to same monitor.
What is the trick to enable this?

From my windows PC I can control the volume from the keyboard.
From my macbook I have to use the volume control on the monitor to adjust the volume as the control is disabled in the OS.
I found this app call 'eqMac' which allows control of volume. Not ideal to have to install 3rd party app in order control the volume, but at least it works

The root of the issue is that Apple computers do not support Consumer Electronics Control (CEC). What that means is that the macOS does not allow you to control end devices that are attached using an HDMI cable or DisplayPort hookup. If you changed the volume, that would be controlling another device.
So yes, Audio Midi Setup if your Apple menu -> System Settings/Preferences Sound doesn't see the monitor.
Check where your audio output is set on Applications -> Utilities -> Audio Midi Setup.
You may find the monitor doesn't support certain bitrates or frequencies.
You may also find your HDMI cable doesn't carry audio.
Lastly, not all monitors have built-in audio. If you have any evidence from another computer it has audio with the same cable, check those settings.
