I received a couple of American Express gift cards and was wondering if there was a way to use them to pay for Apple products online - hardware, not apps and music.

I do not believe there is, but it seems you can use it during your online purchase (excerpt):
Any gift card issued by a credit card company can be used as a method of payment when buying from Apple online. During checkout, if you are paying with a gift card issued by a credit card company, you can combine
it with one credit card.
