How to stop predictive text in the Notes App

I am typing in my notes file to myself and consistently see words or entire phrases in greyscale and it will often fill in the entire predicted word/phrase even though it is not what I am trying to type.

It is very frustrating and I have not been able to find a way to turn it off.

I have gone to the edit tab to turned off text replacement under substitutions and have still not been able to resolve this issue.
