All the answers say go to settings, scroll down to safari and there will be a default browser option. There isn’t!

The default browser option will show up in the other 3rd party browser settings if you have one installed.

Not that I know of! I haven’t installed one.
The reason I ask is that my iPhone suddenly defaulted to Google as a browser.
If you installed Chrome, and selected it to be the default, that would make sense. Are you sure that you don't mean the search engine?
To change your Search Engine, go to Settings > Safari > Search Engine, and change it to something other than Google if you want to use another search engine.
