I added text annotations in Preview
Next time I open my file, the text is flattened. I cannot delete it
How did that happen ? I do not want the text flattened
I want to be able to delete or edit it.

File > Print… : Save as PDF will flatten the annotation layer into the PDF and that ends your access to those annotations for subsequent Preview access.
As Preview autosaves annotations to the open PDF as you add them, at least on the local Apple filesystem and iCloud Drive, manually saving the PDF is purely optional.

If you add text to an image it will be flattened. Convert it to a PDF first if you want to edit annotations.
The original was editable pdf.
I added text to it - next time I opened, it was flattened.
Preview can not edit PDFs so I'm not sure what you did.
I seems that when you save Preview, it will flatten your text that you added (with the tex button)
Not on my Macs.
File > Print… never occurred to me since I never use it. You could be on to something.
