I am looking to buy a mac mini. I currently have an HP laptop and use an HP USB-C/A Universal Dock G2 (5TW13AA#ABA) to connect to 2 monitors. I would like to continue to use the dock with the mini if possible...

Ask HP, or review the HP Dock specs. How many users that respond to posts here actually have this HP dock connected to an M2 Mac mini Pro running Sonoma? Not a large domain of users, and there are other Docks that are known to be compatible with Macs.
Typically USB-C docks work, but only support a single external monitor when used with Macs.
So probably will work if you connect one monitor directly to the mini, but to be safe double check product descriptions or ask manufacturer.
The M2 Mac mini natively supports 2 displays and the M2 Pro Mac mini supports 3 displays.
