I have music on my iPad that I want to transfer to a playlist on my iMac, but I can't find any option that is not the reverse...that is, I only see the option to transfer music from my iMac to my iPad. Life was so much simpler with iTunes.

No it has always been that way a one way sync itunes/finder to Apple devices.
You will need to purchase iamazing or touch copy to export the music from your ipad to mac.

On your device, find the song file in the Files app. Long tap on the file, choose "Share," and send it to yourself by iMessage or email. Over to your Mac, detach it and add it to your iTunes/Music library.
Thanks for your response. Could you be a bit more specific on how to
"copy" the songs on iPad to export to my iMac? I only have
a couple of songs I want to transfer, so I'm not interested in
purchasing some app I'll probably never use again, but I'm not clear
on how I should proceed with the option you mentioned.
