Re: "Is there a way to switch Bluetooth automatically from hearing aids to car
without touching the iphone when driving/receiving/making a call?"
You may need to check just what is possible in your particular case, with the hearing aid manufacturer and / or with your car.manufacturer's app, manual, or website.
Eg: See: (Non-Apple online article) Switching from Phonak hearing aids to the car

If your car uses Car Play, there may be help via speech ... available with some tasks, using Siri.
You can use Siri with CarPlay to access many of the apps on iPhone ...
eg: Wondering if your hearing aid manufacturer has an app installed / available for your iPhone
How to: Use other apps with CarPlay - Apple Support
Accessibility support options if needed:
Eg: There's a "Get Support" link (online chat / phone / email etc.) at the bottom of the webpage (link below).
How to: Get accessibility support for all Apple devices (info / support / contact options etc.).
