Changing to GMAIL as my Default Email Provider
I changed my default E-Mail to GMail in settings but when I click an email link it's still defaults to Mail.
How do I change that?

Specifically which part of Settings did you use to change your default mail?
If you used Settings > Mail > COMPOSING > Default Account, that changes which account you use within the Mail app. That would change your email provider (as per your post title) but not your email application (as per the body of your question). Those are two different parts of the email system.
