I bought Apple one but it keeps asking me to subscribe. How do I activate it

Check you are signed in (to your iPhone) with your correct Apple ID:

Sign in with your Apple ID - Apple Support

For an individual Apple One subscription: seems you just sign in to, and use the apps:

• Apple Music
• Apple TV+
• Apple Arcade
• iCloud+ with 50GB of storage

Eg: Open the Apple Music app and tap "Listen Now".

In the top-right corner, tap the photo icon.

Sign in with your Apple ID and password.

• To enjoy the benefits of sharing your content with family members, subscribing to the Family Plan is essential.
• If certain family members linked to your Apple ID are located in a different country or region than you, they will only have access to iCloud+.

On your iPhone, iPad, or iPod touch, go to Settings, tap your name, and then tap Subscriptions. Tap Apple One. Choose a plan.
