Advised M1 chip with 8g would meet my needs (data analyst, video creator music creator as a hobbie) now I’m stuck.

I was a long time Windows user, as a few professional ‘doors’ opened I decided to wait for the M1 chip and discuss making the switch a MacBook Pro M1.
Being a scientist I did months of research and read how the M1 and unified RAM.
Nov 2022 I went to the Apple Store and was very clear that I wasn’t a ‘regular’ user and explained what I do and how I’m looking for a machine that will scale to meet increasing demands over the next few years, that I used the Adobe CC suite, Resolve, work with HDR footage, upload to YouTube, work with stats software, will be building apps in the next year, websites for e commerce and a big hobbie is also writing music so I use Logic Pro.
I was clear that money wasn’t a barrier but if a laptop could handle all that then that’s great but not essential.
i was recommended the MacBook Air. This was not was I was expecting. So I politely asked for more info. The staff went to get a “genius”.
I repeated everything above and he advised a MacBook Pro M1 8g. I asked if 8g would be enough for the above. He said “absolutely, definitely, no doubt” and referred to the unified RAM and stated I’d get a good 4 years out of the MacBook (then walked off)
Fast forward, 1TB machines are now available, numerous chips and after reading all about RAM and taking all the RAM saving steps possible - premier pro struggles to handle 4K footage with any added graphics.
Hard drive and battery health are fine. The Adobe website now says minimum spec is 16g.
I’ve tried resetting with Time Machine so I basically started again as it was a newly purchased laptop.
no joy.
I find part exing for an upgrade to get £450 back for a 1.5 year old laptop ludicrous.
Long question. But its annoying when the single question I put trust in someone else for (whose job
it is.) failed.
Am I simply screwed unless i get a a better spec laptop?
customer service seemed to have taken a nose dive at least here in UK.
