Buying an Apple watch in India and using it in the UK

I live in the UK, and my Apple ID as well as my iPhone 12 were set to the UK in region settings when I first entered the ecosystem. I intend on living in the UK, but have been considering buying an Apple Watch from India, as they have more frequent sales with larger discounts. Will I be missing out on any features if I buy the Watch in India and use it in the UK? My main concern is Apple Pay not working. Also, when it asks for the region during set up, should I select United Kingdom even though I am setting it up in India?
