Relocation of Documents folder to an External SSD

I’ve just bought a Mac Mini, it has a lot less storage space than my iMac, so I purchased an external 2TB SSD drive, I want to permanently move my OS Documents folder to the external drive and for documents to be automatically opened and saved there, how do I do this?

You can move and store your Photos, Music or Movie Libraries on an external drive.

Tip: To protect your moved Library(ies) it is best to have two external drives. One external drive for the Library(ies) and a second external drive to backup the Library(ies) on the first external drive.
