I used to have the option of securely deleting files on my Mac. I could open my trashcan and go to the finder, and there was an option to delete the files in the trashcan securely. Is there an option for that now??

When did you have that option? If your computer uses a SSD for storage, you do not need to "securely" delete files. Old rotating drives had the option to overwrite the deleted file location. Is this what you are referring to?
If you’re using an SSD, every delete is secure.
The storage has to be erased before re-use.
SSDs also use wear leveling, which also means there’s no overwrite.
That’s because SSDs work very differently from hard disks.
You’ve preferably also encrypted your storage, correct?
Right click on the file > Move to bin > Go to Dock > Empty bin > File are completely deleted.
