I’m currently a foreign exchange student in the US from Germany. I was wondering if I buy an iPhone 15 pro here in the US with the “connect to any carrier later” option, will I have any problems using it later in Germany? Or will I have any problems with switching data from my German phone to the American one, including wallet and everything?

You'll likely be denied warranty service on it, and your German carrier will need to support the eSIM.

Then it will likely work fine in Germany as long as the phone isn't carrier locked in any way. The biggest issue you'll face will be the total lack of warranty on the phone in Germany, which would require you to come back to the US for service for just about any issue with the phone, except screen replacement and battery.
Will that be all? My German carrier supports eSIM, as well as switching from my physical SIM card to eSIM.
