How do I restore the full size keyboard on my ipad

I hate the small keyboard. I never want to see it but it sometimes appears without explanation. Apple support says to put two fingers on the keyboard and drag apart to enlarge it, but that does nothing. Please help. The tiny keyboard makes my iPad awful. If I wanted a tiny keyboard I would use my phone.

bonus points for instructions on how to disable this thing so I never have to see it again.
