Is there a way to make each of my Apple devices different in terms of apps? I would like to have some apps on my phone and others on my MacBook and/or iPads.

If your devices are on the same Apple ID, then removing a subscription will be removed on all devices. If you don't want an app you have on a device, you can remove the app from the device as that will NOT cancel a subscription at all.
