Note that if you are subscribing to Apple One, iCloud+ is part of the bundle.

Apple One - Apple

I don't think you can unsubscribe to just the iCloud+ component of an Apple One plan. (If you were subscribing to an Apple One plan, and to a separate iCloud+ plan to get extra storage, you could cancel the extra iCloud+ plan by itself.)
