Yes
Edit the existing Note.
Even adding a period at the end of a sentence will change the Date Stamp
Notes >> Setting and refer to image below to Sort by " Date Created "

You are right. Editing the note does change the EDIT date
and time stamp. However, what I’d like to do is changing the CREATION date and time stamp.
i want to sort notes according to their creation date and I need to change the creation date and time stamp for some notes to achieve that.
