How do I turn off the 5ge in iPhone?

You can’t. With 5G Auto or just 5G your iphone will switch to LTE (what AT&T calls 5Ge) if the 5G signal is weak or unavailable. You have no control over this.
Settings->Cellular->Cellular Data Options->Voice and Data->5G Auto, 5G, LTE
FYI, AT&T was sued over 5Ge for false advertising by Sprint. They agreed to stop using the term but as you can see, they didn’t. It’s still false advertising. 5Ge is not 5G, it’s LTE which is quite a bit slower than real 5G.

5Ge is what AT&T calls LTE. When you see that it means that there is no 5G coverage in your area.
AT&T Marketing has been marketing 4G LTE as 5GE.
It’s not 5G.
If you’re connected on 4G LTE, as was mentioned above, there is likely no 5G coverage.
