Currently I have a custom built PC with the following specs:
Ryzen 5 3600
NVidia RTX 3080 10GB
32GB DDR4 RAM 3000MHz
2TB NVMe SSD
4TB SATA SSD
4TB 3.5" 7200RPM HDD
I am wondering if I would notice an appreciable difference if I got a Mac Studio for video editing or if it would be a silly purchase and I should just get a better CPU. My M2 Max Macbook Pro 14" is far more stable when video editing than my PC, I've noticed.

All I can point out is that Macs are the professional's machines of choice for video editing. The M series Apple Silicon systems are optimized for this especially when using Apple’s own editing software Final Cut Pro.
We’re not here to compare hardware performance and you have already noticed a difference between your PC and your MacBook Pro. I hope you are not here to start some kind superiority argument because that's not going to happen.
Finally comes the question of price. A fully tricked out Mac Studio is going to be considerably more expensive than an off-the-self assembled PC. So it depends on how much value you see.

Yeah I’m not here to start a superiority argument, just trying to see what will work best for me. Maybe if my PC doesn’t handle editing my project well, I’ll plug my MacBook Pro into my 3 screens and edit from there.
I’m glad they recently allowed disabling of mouse acceleration. That’s a very good update.
