I added some pictures over the years and have tried using the Markup feature to edit them in the past but was never able to get the eraser function to remove an object from either a screenshot or saved picture. Is this possible using iPhotos on my iPhone 12?

No, sorry, the markup tool is all you have in Photos iOS to make local modifications.
There is no retouch brush in Photos. You van just cover the area of the object by something else, by painting over it with mark-up or adding a sticker.
