As far as I know, you cannot upgrade the processor after purchase. If you have a Mac Studio with a M1 Max SoC, the only way to "upgrade" to one with a M2 Max SoC would be to sell (or trade-in) your existing Studio and buy a newer one.
And what is the difference between a mini apple and apple studio apart from the configuration (processor, ram)?
There's the chassis. But just as importantly, there's the processor – which affects the CPU, GPU, and options available for many other things (RAM, ports, number of displays, video encoding engines).

As a practical matter, you'll probably find yourself comparing the M2 Pro Mac mini to the M2 Max Mac Studio. The M2 Mac mini has only two Thunderbolt ports, and the M2 Ultra Mac Studio is overkill for most people's needs (and budgets!).
The M2 Pro Mac mini and M2 Max Mac Studio both have
- Two rear-panel USB-A (USB 3.0) ports
- Four rear-panel USB-C (USB, USB4, DisplayPort, Thunderbolt 4) ports
- A rear-panel HDMI port
- A rear-panel Ethernet port (Gigabit or 10 Gigabit Ethernet, depending on model)
- Support for multiple displays (up to 3 on the M2 Pro Mac mini; up to 5 on the M2 Max Mac Studio)
The M2 Max Mac Studio also has
- 10 Gigabit Ethernet standard. On the M2 Pro Mac mini, Gigabit Ethernet is standard, and 10 Gigabit Ethernet is a custom-order option. Note that the 10 Gigabit ports will not run any slower than 1 Gigabit, which may be an issue if you have an old router that doesn't support Gigabit Ethernet speeds.
