If you are scanning from the printer/scanner device and you cannot select the destination of where the scan "lands" then you need to speak to the administrator of the printer and ask them where they have the scan set up to land and then show you how to navigate there from your Mac. This has NOTHING to do with the operation of the Mac, Mac OS or the device itself, it is simply an administrative issue you need to solve in your place of work.
If the admin setup the device correctly for each user, then they created a scan folder for each user. You will simply need to know how to navigate to that destination. Once you have that then it's a simple matter of creating a shortcut (I'd put that on the Finder Sidebar) to that destination, so ever time you scan, head back to your computer, click the shortcut and voila there is you scan!
