is there a way to bypass the age restrictions for creating accounts with apple id
My son is trying to log into a game but it won’t let him because of the age restrictions for creating accounts. Is there any way to turn this off?

Not without changing his age setting there probably isn't. If he is a child this is something you would have to lie about.
According to the support article: Update the birth date associated with your Apple ID - Apple Support
"If you need to change the birth date for someone below age 13 [age varies by country - see the article], contact Apple Support."
