Seems you can just change the language on your iPhone:
Eg: Apple Support's online article: Change the language and region on iPhone - Apple Support

Ummm .... Sorry that hasn't helped ... if you haven't already, you might want to try restarting your iPhone (deletes temporary files, updates recent setting changes, etc., and often restores order if something is not working as expected.

I do not know whether the SIM card may over-ride the iPhone settings .. have no experience of this.
Wondering whether your SIM-provider can help,
or
whether you may want to check with iPhone Support ... there is a "Get Support - start now" link (online chat, phone, email etc.) at the bottom of their website (link below):

In my settings, I already have English as preferred language and all the units in English like day of the week and temperature, etc. everything continues to come up in Spanish even though my preferred language shows English.
I tried turning my phone off and waiting a while and turning it back on, and that did not solve the issue. Everything still comes up in Spanish and in my regions I tried Panama and I tried the US and English is my first language and that setting/category.
In my settings, I already show English as my preferred language and all the units like day of the week and temperature are in English and yet everything displays in Spanish.
Thank you so much for trying to help me. I have a USM card but I didn’t want to change back-and-forth but maybe I will do that it may be easier. I’m not good with small tiny fidgety things.
