Mac Mini with an external USB SSD and syncing with OneDrive (or iCloud). Is it possible?

I've never had a Mac desktop / laptop before but am considering switching to replace my aging Windows desktop but have possibly come up against an issue that will stop me switching.
Currently my desktop has a system drive in it and a second SSD which all of my files live on. I use MS OneDrive to Sync the files SSD to the cloud and then this is available on any other device.
If I put my files SSD into an enclosure then I believe I can connect it via USB and use it to happily store files on - no problem. Does Mac OS use a "My Documents" type folder similar to Windows and can I move that to a USB drive?
Assuming all my files are now on an external USB SSD can I use MS OneDrive to sync that external drive? I've read various reports that say it can only deal with the internal drive.
I'm not wedded to OneDrive so would be happy to switch to using iCloud if that would work properly?
I hope that makes sense and I've explained it clearly enough.
