Can I swim in a saltwater pool or in the ocean with my Apple Watch?

Apple says yes.
But you need to be careful and not damage the watch's water-resistant seals or using the watch in any water could destroy the watch. For example, the chemicals in soaps, shampoos or detergents can damage the seals, so it isn't a good idea to shower or bathe with the watch on.
