Wondering if you have installed third-party (non-Apple) apps or accessories that have access to the microphone.
You can: Control access to hardware features on iPhone - Apple Support
Eg: says:
Review or change access to the camera, microphone, and other hardware features
The list shows the apps that requested access. You can turn access on or off for any app on the list.

All the best :-)
Thank you for the information! I don’t have any type of third party apps as I only use the store apple gives us and also no accessories but I’m remembering there was a big stink over the Temu one and I did use it and browsed items though never ordered. I did also check what apps had what permissions as you suggested here and nothing looked suspicious. I will check out the sharing to make sure it isn’t because of anything unlocked there. I was able to screen record and gave an apple support agent the video of what looked like a blatant hack from one of the stores card game apps. Person took my Microsoft account over briefly but I got it back from that episode.
Thank you kindly for taking the time to reply, for checking through those suggestions, and for sharing your experience with the community. :-)
