Uploaded my second episode to my hosting site. It now shows up in PodcastsConnect as draft. Am I just in waiting mode until it moves out of draft or is there a step I need to take to publish it? The publish button is greyed out.

Well, I can't see any problem with either the feed, the episode image or its media file; so I can't really suggest a solution. Podcasts Connect has changed since I was podcasting so I don't have access to look at it, but you should look very carefully at the page and see if anything isn't quite right. Failing that, I can only suggest contacting Podcasts Support: https://podcastsconnect.apple.com/contact-us
This suggests that there is something wrong with either your episode's entry in the feed, or the actual episode media file, though that's a guess. If you care to post the URL of your feed I can take a look at it.
