keyboard sleep imac hotkeys short cut

SO back when I had my OLD keyboard (I still have it but not hooked up to my Mac) you used to be able to put the computer to sleep using "Command + Option + Eject". Well I have the new M3 iMac with the keyboard that Apple shipped it with, and there isn't an "Eject" button as the only things we eject now are USB thumb drives, no more cd or DVD ROMs. My question is how do I set up "hot keys" like "Command + Option + (key of my choice) to make the computer go to sleep? I've seen that "Command + Option + power key" will put a Mac to sleep, but I'm sure that's on laptops, I'm not talented enough to hold down those keys and reach around to the back of my iMac and hit the power button all at the same time!! I have tinkered around and used the fingerprint key, whatever it's called (next to F12) and it logs me out and if I hold it down after log out, then the computer goes to sleep. Is that how I'm going to have to do it??

Computer info:

iMac M3

16GB ram

Mac OS 14.3.1

iMac 21.5″, macOS 10.14

Go to System Settings > Keyboard > App Shortcuts, click "+", in the field "Applications" leave the selection at "All Applications", in the field "Menu title" type "Sleep" and then press the key combination you want to use to put the Mac to sleep (try using a very unique one that won't interfere with any other.)
