I’d like to cancel my current iCloud subscription and downgrade to the free 5GB. My iCloud storage (50GB) has been full for several years now so there is no point in keeping it I guess. So I’m wondering if some of my photos and videos will be deleted from my iPhone if I cancel the current subscription?

Yes, cancelling the storage may well lose most of your photos after 30 days grace.
You need to download full size versions to a computer or a very large iphone/ipad first.
