Apple Pay auto changing shipping details

on a few occasions now, when shopping online I have selected click and collect options to collect my parcel but as I have checked out with Apple Pay, all the details I have entered on a site have been overwritten with the shipping details saved with the card and my delivery options changed without me having the chance to rectify it as checkout also auto completes. Is there a way to disable details being overwritten?

Thankfully parcels are being sent to my parents house but it is a bit of a pain as they live in another city.
