I would like to separate my photos I to their own albums or their own folder. I want to take certain pictures out of the “all photos” and put in their own. I’ve looked at the other questions similar to my question and haven’t seen any answers. It’s 2024 and there should be a way. I don’t want duplicates

You simply cannot remove photos from "All photos" without deleting them completely from Photos.
Photos in the albums are not duplicates.
The "All Photos" album is always showing you all photos you have saved to Photos. It has been designed as the place where you can always find all your photos, sorted chronologically by the date they have taken, like you will be always seeing all photos in the Recents album, but sorted by the date they have been added to Photos.
Albums are showing you a selection of photos from your library, but they are not holding duplicates - albums are just referencing the one copy of the photo in the library. You can add a photo to as many albums as you want without creating duplicates.
