Applying for Apple Pay support as a merchant involves quite some steps and registration that a merchant wouldn’t want to waste away by acting scammery, when they (also) have a legit business. Actual scamming rates should be quite low. The payment will be done with the card behind Apple Pay though, so check with your financial institution about undoing charges or making refunds, if the merchant is evasive.
