iTunes Backup Password and Keychain Access Issues

I am trying to transfer data from an iPhone 7 with ios 15 to a new phone. During the transfer process I am asked for a itunes backup password (which I don't remember putting it) I have tried all the passwords I can think of with no luck.

After reading several items I checked my keychain acess and it does not appear to have my iphone backup within it to allow me to access the iTunes password. I use the search bar within keychain to find "backup" and two items show up from 2019 nothing from a recent back up that I have done. Using MacBook Pro 13 with 10.14.6 Mojave

Is there another place to find this password? or If I choose to do a reset on the iphone can I change the password without losing all my other information. Then do a non encrypted backup before transferring to the new phone.

Any help is appreciated.

MacBook Pro 13″, macOS 10.14
