To change the email that you use for your Apple ID, see instructions in Change your Apple ID - Apple Support
iCloud uses your Apple ID so you only need to change it once as described above.
To change the name associated with your Apple ID, use any Internet browser and log into https://appleid.apple.com/ and then click "Personal Information."
