So, my boss had me put her and her husband's soccer team email account on her phone, she had her iCloud account on there and her old work account. We removed the old work account and put the soccer account onto her email, and it erased her contact names and a lot of contacts out of her phone book. Any idea what could have caused this or how we can fix it?

The contacts were probably being synced with her old work email account. When you deleted the account, it deleted all of the information synced to that account, including the contacts synced to it.
They are gone. The only way to get them back would be to re-add the account, assuming it even still exists and she has rights to it.
Do you mean you signed in with a different Apple account? if you do that and you select "no" when it asks you if you want to keep the data from the old account then it will erase the old account information that is on the phone.
I can't help but feel that the situation is more complicated than that but you do not provide much background story.
That is what thought had happened, we did readd the account that we deleted but the contacts are still gone. Thank you for your help!
