Each year I take all my photos off my iPhone and store them on an external hard drive. However, with all these updates it makes it harder and harder to figure it out. What's the best way to do this? last few times I did this I had to use iPhoto yet, I have no idea where those photos were stored on iPhoto. I don't want to depend on any cloud system.

Not sure if this is what you are looking for but the way I do it is to log in to iCloud from the website then login to my account and download from there. I do this from my windows laptop. Once the pictures are saved, I go back into my iPhone and delete them. It will take a while to download a whole year of pictures so you may want to do monthly.
This is the only method I have found that will let you download the original full size photo without a separate app that you have to pay for. Some people use iTunes but that didn’t work very well for me.
If you don’t have a separate computer or laptop you might consider buying a separate hard-drive to store them on. USB’s tend to have issues connecting over time.

This may involve using a Computer to download all the Videos / Pictures and then Transfer to your external Drive
Then, remove all the Videos / Photos from iCloud
Download iCloud photos and videos
I don’t want to use iPhoto cause it still stores the photos/videos that I can’t find. I use to use it for two years but I could easily find the photos. Not anymore.
This doesn’t help me one bit and I already said I put them on an external hard drive. I don’t want to always rely on a cloud system.
