When you Google a topic, always check the date of the associated article and the application context. MS Word and LibreOffice Writer have a text-to-table and obverse menu item, but Pages hasn't had this feature since Pages '09 v4.3 in mid-2013.
For a single-column list, select and copy it to the clipboard. Next, insert a table, single-click the first cell, and then paste. Your text will populate downward, one word per cell in Column A. Click once on the Column A header with the small down arrow and select Sort Ascending.
Without a table to perform the text list sorting in Pages, one can install the free WordService which is a collection of services that one can run with either their keyboard shortcut or from the Application's Service menu on selected text. Among the WordService items: there is a choice of Sort Lines Ascending and Sort Lines Descending. In your prior case, you would just select your text list, apply Sort Lines Ascending, and in an instant, your list is sorted in place.
When WordService installs from the Mac App Store, it installs its services for you but does not automatically activate them. You will need to visit System Preferences : Keyboard : Shortcuts : Services and scroll down until you find WordService:Sort Lines Ascending and enable it. In Ventura and later, that would be System Settings : Keyboard panel. WordService also installs an application in your /Applications folder that has the sole purpose of launching Apple's Preview application with a WordService overview of the Services it installed.
