I have 3 airtags, and sometimes when i get close to one or someone with an iphone gets close it starts making a lot of noises and there is a notification that pops up in the other people’s iphones. I dont like this, since they are able to see the path the airtag took and probably follow me. Please help with this, i have no privacy with my airtags

Not sure where you got the idea that the Apple AirTags provide you with privacy.

They will also appear on other iPhones because the tags participate on the Apple Find My Network. That's how you are able to get their location when the tag is not near you.
They also appear their as a safety measure to let folks know that there is an AirTag nearby (within Bluetooth range of their iPhone). This alerts then of its presence. Nefarious agents use them to try to track people and this helps to prevent that.
