You can manually order your website Favourites. There are currently no native tools to automatically sort - or alphabetise - your saved Favourites or Bookmarks.

Assuming that you have an iPad with a recent version of iPadOS, manual sorting can be achieved from the Safari sidebar.

With the Safari App open, if not already visible expose the sidebar by tapping the blue Sidebar button at top left of the Safari App window. From the sidebar, tap Bookmarks - and then Favourites. At bottom right of the sidebar, tap the blue Edit button.

You can re-order by dragging at items associated "hamburger" icon (icon with three horizontal lines) up or down the list. Items can be deleted by tapping the associated red "-" icon. Individual items can be edited by tapping the associated ">" button. Folders can be added by tapping the blue New Folder button.

Tap the blue Done button when you're finished.
