I have a iPhone 7 Plus and I need to do a software update to 16.0 is this possible or do I need a new phone?

You would need an iPhone 8 to run iOS 16.

But, it would be wiser to look at a phone that can run iOS 17. That would mean an Phone XS or higher model.
