Have just purchased a new iPad 10th Gen but when I have logged in to my Apple ID lots of the apps say “waiting” and Wong download, have tried so many different fixes but 48 hrs later I still haven’t been able to download them - any ideas?

Having presumably transferred your data and settings to your new iPad, in rare circumstances the download and installation of associated Apps can appear to stall.
Try a long-touch (i.e., touch and hold) of any App that appears to be stuck; next select Prioritise Download. This will usually kick-start and complete the App installation process.
Try a forced restart of your iPad:
Force restart iPad (models with Face ID or with Touch ID in the top button)
If your iPad doesn’t have the Home button, do the following:
Force restart iPad (models with the Home button)
Press and hold the top button and the Home button at the same time. When the Apple logo appears, release both buttons.
Sadly that hasn’t worked , have tried various apps to prioritise but nothing happened
