Why is there SO MUCH LAG when I am working in InDesign on a NEW iMAC / SONOMA?
NEVER had this problem with my old iMac / HIGH SIERRA!

Hello,
Have you run Disk Utility's Disk First Aid on all connected drives?
Are you running any VPN, Anti-Virus, or Cleaning apps?
We need to see what all is running, a report from this will not display any personal info...

EtreCheck is a FREE simple little diagnostic tool to display the important details of your system configuration and allow you to copy that information to the Clipboard. Use the Note tool on the bottom of this editor's toolbar, as shown in the image, to copy and paste the output from EtreCheck. In a Reply before you click post, look for this to add longer texts...
What version of InDesign are you using? Adobe does have a Silicon version, but if you transferred it from your previous Mac, then it is using Rosetta and not taking advantage of the faster processor. Adobe did release the latest update this month to address a number of issues with their program. It is an Adobe Issue as they are the only ones that can provide the updates necessary for the ideal user experience.
You will see the many problems they have been addressed in the previous versions by Adobe. Believe it or not, Apple has no control over any of these problems, and they are only resolved by Adobe.
If you can provide the Etrecheck report suggested by BDAqua, we might be able to pinpoint some likely culprits that could be slowing your iMac down. This will save us from playing 20 questions in order to drill down to the root cause.

Thanks for your reply. I have the latest of InDesign. I just uninstalled it and reinstalled it hoping that would help but it didn't.
