Mac restarts every time it goes to sleep (2021 16-inch macbook M1 pro)

Found a fix!!!

Power off. Power on while holding the power button.

Go to reboot settings.

Disk Utility -> use "Erase" on Macintosh HD -> Use First Aid -> Reinstall Mac OS

Mine reinstalled as Ventura 13.6.6 and fixed the issue.

When I tried to just reinstall with the new Sonoma 14.4.1 the issue remained. Something with the software.

With Ventura 13.6.6 no issue. Everyone who says update to the latest software don't listen.

You should report the circumstance you found out fix way to Apple directly with kernel crash log.
