How to add an email account on new iPhone?

You can just add the email account to the email app that you are using. Once you successfully add the email account, then the email data will also be transferred from that email account. If the email account is not connecting, then is it producing an error notification on your screen? Can you get into Settings ➡️ Mail ➡️ Accounts ➡️ Tap on the email account: Does it offer to their the password? If nothing works then you may have to delete the email account on our iPhone and then add it again.
