how to Close apps when I swipe away

In iPhone 15 pro, when I put away safari or mail or text or actually anything, it always opens up to that old spot where I left it . How do put away and close all tabs so when I start it is new from the beginning? Currently I have to do three clicks to close tab, search the name of the person I’m calling texting face timing, and in Safari I have to x out tabs to be able to type in something new. Please help. I jut want things to close when I put them away. Than you.
